Nostalgic flavours from NY and Cali - super finely  sliced white onion smash - with zesty mustard and ketchup bringing back  memories of Mikeys on the Lower East Side… zesty rich creamy deluxe sauce  inspired by the big fresh flavours of Caliornia, Jimmy’s Famous, In-N-Out. We use a coarsely ground chuck and brisket blend with added marrow for buttery  richness. Our smash technique leaves a juicy middle with a beautifully caramelised crust. Hand cut fries - 6mm nice and thin with a good crisp, blanched and twice fried for  the best shoestring fry in town. Mildly spiced herb salt dusting.
